The invention of the interactive video games like DDR and the Wii are great items to incorporate into a curriculum. How do you keep other students involved with only two people being able to play the game? Any tips?

For games like DDR I hook the playstation up to the LCD projector, turn off all the lights in the gym, and have a lottery for who gets to dance on the mats. At the same time all the other students practice since it is massively projects on the wall for all to see. I hold them accountable by having them wear pedometers and basing their daily points on attaining a certain amount of steps while practicing.
